Dad's Roast Beef
Buy the beef... Get a cut with good marbling. I'm sure any roast cut will do.

Unpack and dry off. Allow to rest at room temperature for a hour and a half or so (So it comes closer to room temp).
Very light coat of oil.
Kosher salt about a half hour before starting.

Pre heat a thick bottom fry pan on high heat.
Pre heat oven to 250.

Sear each side for about 5 -7 minutes. Don't let it burn but get a good
browning on both sides. You need good heavy duty forks to flip it.

Already looking tasty...

I use a couple of screens and a lid to keep the spattering grease down.

1 can of beef broth in good oven-ready pot.

Move the meat to pot.

1 chopped onion and fresh garlic on top. Sambal Oelek adds that nice chili heat.



Roast for several hours.
After the broth starts boiling I turn down the oven to 175 or so.
I flip the meat after a while.
I keep checking it every half hour or so after 3 hours. You can't really mess it up.

After that just enjoy! There has to be a way to use the juices after it's done to make soup or gravy or something.
